The first cut I always make is around the anus and a deep circular cut around the inside of the pelvis. This cuts everything loose so it all pulls out with the guts when I am finished. I usually don't ever cut the pelvis in the field.

I do it as 4everAutumn describes. Only when I was young and inexperienced did I struggle cutting the pelvic bone.

I do as 4ever does though I do see guys cut the pelvic bone on occasion. Personally, I do not want to dull my blade on bone.

You destroy too much meat on the ham if you try to break the pelvic bone. Just ream the bung and pull it through.

I cut the pelvis, it just seems easier/cleaner and it doesn't ruin that much meat.

When field dressing, neither, when they are on the skinning rack, both.

So far, I've built a "bee vacuum" and a "swarm trap".
When I deploy the trap this spring, I'll need at least one hive....I hope!...
