    On a buck, I just leave the tarsals alone and make sure not to let them contaminate any meat. Don't touch them and then touch the meat.

      I agree with piney,unless you want to use the tarsals as a scent lure there is no need to remove them.

        You don't have to remove the scent glands which are called tarsal glands. If, you do decide to remove the tarsal glands wash the knife that you used before field dressing or butchering your deer. Also wash your hands after handling the tarsal glands. Deer urinate on their tarsal glands. There is bacteria on these glands and you don't want to spread this bacterium to the meat.

          If you know how to utilize them as a scent lure, it's an excellent way to offer "fresh lure" to a buddy who is still looking to fill his tag for the season.

          As others have mentioned, please be careful when removing the glands so the meat isn't tainted at all.
