Herbie - I don't think 80 grains is too big, but if you're interested in minimizing pelt damage look at bullet construction. I have two rules when it comes to predator bullets, in this order: first, they have to be accurate. You can have all the pelt-saving bullet construction in the world, but if it won't hit the coyote you are much better off with a soft-point that will blow through fur but hits where you point it. Second, they have to either blow up inside the critter or leave no more than a dime-sized hole on the off-side. You can get that performance with any of the frangible bullets: Hornady's 58-grain V-Max and Nosler's 55-grain Ballistic Tips are two of the best.
80 grains is pretty heavy, but if you'll be doing a lot of long-range shooting in stiff cross winds, it's a pretty good choice. The higher sectional density and ballistic coefficient of the 80s give you about the same velocity at 300 yards that a .223 pushing 55-grain V-Max's gives you at 200 yards.
Have fun, and let this crew know what you choose.
