There probably is not a great deal of difference between the 3" and 3.5", but I shoot the big shell because I work too hard to get these old educated easterns within range and I want every litte extra bit of shot possible out there doing battle with the brush, twigs and leaves that I often have to shoot through. Yes, lighter loads will work if you get the turkey close enough in open country, but I'd hate to lose or wound a gobbler because I didn't have a heavy enough load. Why tempt failure?
