In my state it is required that you wear blaze orange while hunting. Right now I wear a blaze orange hunting vest over my jacket, should I switch to wearing a blaze orange jacket instead? If so, why?

Some State or Provincial legislation require that you wear a certain square area of blaze orange on your person--usually a vest is adequate -some of the blaze orange with black mixed in as a camo pattern are not legal......In Ontario you must also have a blaze orange hat on your head when hunting....check your local regulations.....a blaze orange coat would provide greater visibility as opposed to a vest

I own both blaze vests and full blaze jackets,for the reasons that PAShooter and the decoy hunter stated.Vests allow you to add or remove layers easily,and the extra visibilty of a full blaze jacket makes me feel a little safer when hunting public land where I may encounter other hunters.
